I am making a chicken and rice casserole type thing involving cream of mushroom soup.

That woman has Minnesota-fied me.

In my defense he walked in the living room and said something like,"So I was thinking we cook the chicken in some stock and stuff with rice in the oven?" All I did was look up and say that he was one can of cream of mushroom soup away from really traditional Minnesota food. The rest sort of fell into place.

Uh, recipe? ... uh. Brown some chicken with onion and garlic in olive oil. Deglaze with something good. Add rice and stir to coat with oil. Add some chicken stock. Add cream of mushroom soup with the appropriate amoung of milk. Add as much more chicken stock as you need to cover the chicken barely. Cook at 400 degrees for about 30 minutes. Maybe check after 15 and stir, be ready to add more liquid.

We just made this up.

Salt and fat and chicken and rice. Excellent.

K. [it lacked only peas]

ya-sure, that was my reaction, and you have to have "bars" for dessert ;-)

Bars are, in fact, probably the best part of Minnesota cuisine!

We were going to put frozen peas in with the chicken, but instead put frozen broccoli florets.
