I learned Spanish in highschool (actually starting in Middle School), though the vast amount of my verbal spanish really came from the one month I spent in Spain at age 16. There was a lot of Sangrie involved, but as learning processes went, it was just fine.
I learned Latin both in college and at the beginning of grad school.
I took a summer of french, equal to a year of courses. It was intense and at the end I could read the academic french materials I need to read. I also could have a nice conversation with the art student I met on the train from Milan to Venice. She is from Lyons, and speaks some Italian, Spanish, and English, and of course French. I speak the same four languages, but French the least well. It made the train ride fun.
I've taken a year of Italian courses more recently, but it is the best in current practice, and I hope to be fully fluent by the time I leave in December.
I also took some Ancient Greek along the way (a year and a half worth).
